Egg Salad Sandwich with Miso + Caramelized Garlic Scapes

I bought these beautiful garlic scapes at the Charlotte Farmer’s Market last weekend. It was my first time there and now I wish I had gone sooner. I just get in the routine of going to my little neighborhood market – it’s convenient to walk to and it has everything I need. But this big market had so much more variety! It was a spur of the moment trip and I only had $15 cash so the pressure was on. First I got an almond croissant and some single-batch roasted coffee so I could think clearly about my purchases. Next, some peaches – they weren’t summer-sweet yet but perfect for sangria. I bought jalapeños to make these sandwiches for a dinner party. And finally a hearty loaf of bread and these garlic scapes. I had never tried garlic scapes before – they’re surprisingly sweet and mild! I was expecting something more like a garlicky green onion but that was not the case. Subtle garlic flavor with lots of sweetness sums them up. I browned them in butter and deglazed the pan with a hearty squeeze of lemon juice, some salt and pepper and started eating them one-by-one. Good thing I was able to save a little for this sandwich.

    Tame these wild beasts! Sauté in a bit of butter and some salt on medium heat to slightly brown. Turn heat down low then squeeze on the lemon juice.

    Mix the ingredients for the miso mayo together. Mash in the eggs. Fresh pepper here is good. Parsley too.

    Assemble as shown. Take a big ‘ol bite.

Ingredients for the Sandwich

4 eggs

2 tablespoons mayonaise

2 teaspoons miso

1 teaspoon soy sauce

1 teaspoon curry powder (optional)

1 handful of parsley

about 5 garlic scapes

juice of half a lemon

some butter / olive oil for sautéing

salt and pepper to taste

a few slices of your favorite bread

 

Directions

      Thanks Jo! I’m new to them too! The garlic scape is what grows out of the garlic bulb to make a flower. It’s cut off so that the energy goes into making a big bulb and it just so happens to taste really good too! :)

    Isn’t nice to have markets within walking distance?! I’ve never cooked with garlic scapes either but they look delicious. And the miso in the egg salad seems like a great pairing that I had never thought of before.
